I actually found this achievement to be surprisingly difficult, even when boosting.
If you're confused by the description like I was, let me describe it a little better...
What you need to do is hit an opponent completely out of the map, not to the lower level, but passed the outer wall. Far enough that they are instantly eliminated.
The easiest spot to do this would be the bottom middle where the wall is crumbled.
I personally used a bomb because it has a very immense pushing force that easily launched an enemy out of the map. I tried shovels and hammers, but they kept veering left and I am terrible with them. Sprint punching might be the next best option, but I had mixed results. I also tried running + jumping + kicking, but more often than not, I'd fly off the map myself.
You might also be able to knock an enemy over the rubble on the main platform between the pillars, but I haven't tested that.
