Some guy just traded all the hostages right before we finished the mission, I spent the whole time guarding them with my life just for griefers to show up

I did it on Overkill via Quickplay. Luckily, a kind soul realized what I was doing and helped, then I guarded the civilians with two sentry guns while the other three completed the mission.

The easiest way is to herd all the civilians into one place at the very beginning of the heist (5-7 people), tie them up and defend while your team completes the mission. As soon as escape is available, immediately run towards it - the police will not have time to save anyone if everything is done quickly
