How to unlock the Art Critic achievement in PAYDAY 3 - Definitive Guide
This guide will unlock both achievements for this level at the same time, including:
If you ONLY want the Art Critic achievement, you can skip the Shonda Latrell and complete this solo in order to get 20/21 bags.
Mission: Under the Surphaze
Player Count: 3+ Required
Difficulty: Very Hard
Loadout: Stealth and Speed
Favor: Zipline Bag Highly Recommended
Step 1: Security Room + Manager's Office
Get into the upper floors of the art gallery and find the security room to disable the guard there and turn off all the cameras. Next, find the manager's office, interact with the computer, and crack the safe in the false wall to find the USB Drive. You can clear out the entire upstairs, taking out all guards and stash civilians in the security room. Grab as many QR codes as you can while upstairs as well. You will also find the spectrometer upstairs in one of the side rooms, which we'll need later. While in the manager's office, make note of the 3 mini sculptures on the desk. DO NOT LOOT these until much later.
Step 2: Disabling Upstairs Security Measures
Interact with the wall panel somewhere upstairs, and do the circle mini-game to disable the security bars in all of the upstairs exhibition rooms. You'll also want to open up all of the exhibition rooms and disable the power circuits to deactivate the laser grids without raising an alarm. This is most easily done through roof access.
Step 3: Secure upstairs loot via Zipline
You'll have to remain in stealth, and it's worth securing the loot in the upstairs exhibition rooms via the zipline just in case things go south later; it'll be much easier to escape. Make sure you DO NOT LOOT any sculptures that match the mini figures in the manager's office, and pay extra attention to the Uma painting. You can find information about this painting in the manager's email. There will be two copies of this painting and we want the authentic one. Cut a hole in the display of either painting, use the spectrometer on it, and wait for the scan to verify its authenticity. Now, take the USB Drive and use it on the authentic painting, looting it as all the other loot.
Step 4: Repeat downstairs
You'll want to go downstairs, stay in stealth, deactivate the bars using the panel mini-game, and sneak into the exhibitions disabling the power when possible.
Step 5: Shanda Latrell Painting
With the entire art gallery opened, and mostly looted, it's time to get access to the secret painting which requires cooperation from all 3 co-op members. Find the 3 sculptures that match the mini figures on the manager's desk exactly. Some are similar, so be sure you have the right ones. Each co-op member should stand at their own unique sculpture and the goal is to loot all 3 at the same time. Wait until everyone is ready and do a countdown in the chat. If done correctly, this will reveal a secret button behind a painting in the manager's office. Before pressing this button, one member of the team should park themselves in front of the Shanda Latrell, as using the button starts a difficult laser grid. Being there before it's activated allows you to skip the laser grid. Once the button is activated, loot the Shanda Latrell.
Step 6: Escape
At this point, you can break stealth, but staying in it will make things easier. Either sneak all the loot to the escape van, or break stealth and signal the chopper. Before escaping make sure you have ALL 21 BAGS OF LOOT, and the Optional Objective for "All loot" should disappear. All loot will require all of the paintings and sculptures from every exhibition including the authentic Uma painting. Once the optional objective disappears, escape for each member to gain both achievements.

For anyone else who is only going for the "Art Critic" achievement (I understand this solution/guide, which is great btw, is for people to get both achievements at once) you dont need to get the Shandra Latrell painting if you are ONLY GOING for "Art Critic". Requiring you to only secure 20/21 of the total loot. This achievement can be completed solo unlike the "Art Connoisseur" achievement.

Do the paintings without the blood count for this, or do you leave them behind?
EDIT: yes, you need 3 pieces of loot from each room, apart from the 1 room which will only have 2 as you will leave the fake paining where it is!
