Every level will have an 'Ace Score' that acts as an optional objective that will appear at the start of the level, or once you have completed one
These are easier to get if you score big combos, clear every peg, and skill shots, rather than just clearing the orange pegs, or you could just get lucky and drop in the 100,000 bucket at the end of the level, which will help your progress to the 'Ace Score'
You can view these at the start of the level in the top right corner, or at the end of the level.
Once you beat the score and complete the level, the achievement should pop

I’ve had this pop now but only after doing ALL three optional objectives for a level

This is obtained by completing the level and getting a score which is more than the optional objective specified for that level, such as: "Get Ace Score of 275,00". This should come through normal play.
