How to unlock the Displaying Adaptability achievement in Persona 4 Golden - Definitive Guide
Make sure you have "direct control" of your other party members. Leave one enemy alive and guard with everyone except the main character. With the main character change your persona and also guard. Repeat this 5 times to unlock the achievement.

Can get it done quicker by going into a dungeon on your own, without adding anyone to your party. Keep switching and blocking when you get to an enemy, you don't need to win the battle, you get the achievement immediately

I guess if you're just going specifically for this achievement. But if you're just grabbing it through the course of the game, it would probably slow you down to set this up, make the battle take longer, and then re full your party.

There is a good chance you'll get this achievement naturally against some of the longer boss battles, especially if you haven't created an ultimate Persona, and have to flick back and forth between multiple Personas - which you'll likely have to do until late in the game.
To get this achievement simply switch back and forth between a few Personas, 5 times in one fight, and you'll unlock this achievement. It's not rocket science, but it's as close as most of us will ever get to it. If you have one Persona who debuffs and one who heals, chances are you'll get this without even trying.
Just as an FYI, it doesn't have to be five different Personas, just five switches.
