A staple to fighting games such as Guilty Gear and BlazBlue, clashes occur whenever two attacks collide with each other. This results in a spark between the two colliding attacks, which leads to them clashing with one another. This mechanic is helpful in building up meter and the Tension Gauge, but keep in mind that you need to be at a certain distance away from the opponent when doing this. For an example, please refer to the screenshot below:

An example of a clash being triggered

As the trophy's description says, you will need to perform a total of 1000 clashes accumulatively across all modes in order to unlock it. Additionally, you can also unlock Is This What a Clash Feels Like?! trophy_bronze.png if you perform ten clashes during the current round of the match.

If you're doing this in Training Mode or Versus, you can have a second controller help you with this in either mode (and in the former, you can record any attacks that you want the dummy to do on the third page of the pause menu's Training Options, which can be found by pressing r1.png twice while you are there, and there are five slots you can use).

You can also keep track of your progress towards this trophy by going into Records in the main menu, and then go to Play Data. While you are there, press r1.png to go to Achievements and you'll be able to keep track of your current progress towards this and the other trophies that require you to perform a specific amount for certain actions.
