While using hard style, protection is activated when you press left or right immediately as you are attacked - similar to an instant block.
There will be a blue pulse around you. Use this 15 times during a single round to unlock the achievement. This is most easily boosted with another player, or done with two controllers in versus.

I couldn't get this in versus.
To get this to pop, I had to go into arcade, and then get the second controller to pop in and 'fight interrupt'.
