This is most easily done with a second controller, however, it can be done over Xbox Live as well.
From the main menu, enter Multiplayer Mode. Pick either Splitscreen or Xbox Live. Find a match and when prompted to select a character, press the
button. This will allow you to pick which monster you wish to play as. Pick one, and after that, just defeat your opponent(s), win the match and the achievement is yours.

Note: This achievement can be acquired in an offline split-screen match, as long as you have a second controller.
When selecting your character before a multiplayer match, press 
to switch to monster selection. Pick a monster, then go on to win the match in order to unlock the achievement.
