This isn't too hard.
Hit the ball up the center ramp, this will cause the biker to do a wheelie. Hit the ball up there again and then hit the ball around 3 times for the achievement.

Well if I hadn't watched I would have never known. I hit him 10 times with one ball and nothing. I was going to ask if we need to hit him with the flipper up there aimed at him but i see in the video we do. Thanks though and thumbs up from me.
