This is pretty easy actually. There are both Quint and Jaws missions. One way to easily start a Quint mission is to hit either of the orbits 4 times.
To start a Jaws mission just light the 4 letters of Jaws on the in and out lanes then hit the lower left sinkhole. You can do this between balls too. I had 3 orbits plus all Jaws letters lit, then lost the ball, Hit the last orbit, then hit the sinkhole and got this. First try on this table.
There are other ways to start a quint mission, this was just easiest for me.

Where are the orbits as I thought I was doing it but nothing seemed to happen does it say Quint mission or anything or do you have a video? Can you take screenshots as I not sure where the sinkhole is as well

DISCOKING
To start a Quint Mode shoot one ramp or orbit several times.
To start a Jaws Mode have the ball roll over the flipper lanes and light the letters J-A-W-S. Once JAWS is lit, shoot the ball off the tip of the right flipper into the left sink hole.
To get them both going at the same time:
Step 1: Light J-A-W-S
Step 2: Shoot any Ramp or Lane repetitively until you start the Quint Mode
Step 3: Shoot the sink hole to start the Jaws Mode.
