This is a rather easy achievement. Before going out to the world, make sure you have someone with a net (such as Sofia) and a recruit cage (these can be brought at the gate for 380 gold).
An Elite is easy to distinguish by the fact they are glowing red. Find one of them in the world and begin the battle. Kill all but one of the monsters and when the last one is left, catch it as you would a normal monster.

The, Pants, Party
See "The Queen Will Be Pleased" for info on capturing enemy units. Aside from this requiring the capture to be an Elite enemy, there is no difference in the method. I got this when I was working on "GG EZ" in co-op and we both got credit for it even though the unit that did the capturing belonged to me.
