Some of these, like the cupcake and demiclops, you will not need to go out and find on the world map and recruit, while the rest will need to be found. An electrobot will be given to you after the completion of the Freeware quest line as well.
The only creature that can cause some trouble while trying to capture it is the troll mom because it spawns another enemy on its turn. The only way to capture it is either to stun it so that it doesn't spawn one or to time your units' attacks so that they kill the troll mom's spawn right before it gets hit by the net. Other than the troll mom, the others can be captured simply by finding them on the world map and fighting them.
As Texans2K2 has pointed out, you can also buy the creatures from the market for 7,000 gold each. The 3 fighters for sale will change every time you win a battle, but they aren't cheap, so using the market will take quite a bit of gold.
The "recruiting" process is explained in the first main story mission. After that, make sure you always have a few cages with you and a character with a net so that you can attempt to grab any new creature you come across. To recruit a creature, they have to be the last one alive on the enemy team, so you'll also need to be careful of how you're attacking so you don't accidentally kill them. You'll also want to make sure you protect the character on your team who has the net (Hailey by default) or you won't be able to capture anything.
When you successfully recruit a creature, your log book will pop up and show you some info about their abilities. The full list of creatures to be caught are as follows:

In addition to recruiting enemies by capturing them in battle, you can also hire mercenaries from the town in the market (I never saw anything but humans there, but I've seen people post that they bought others). For the "Ranged" type, you can get this easily by simply equipping a human or demi-clops you already have with a bow.
The only tricky ones in the list are probably the gnomes, which show up very rarely in the Tinkletown section of the map (keep returning to town and leaving to reload the spawns), the Octoclops which I never found on the world map itself, but rather inside an enemy group near the beach, and the Troll Mom. The Troll Mom is tricky because she always spawns a baby at the start of her turn, so you need to make sure you setup your moves to where the baby will be killed before your net character moves into range for their throw. If they throw before the baby is killed, the capture will fail.
