Using Corn I'd say is the best to use to target him with the big corn air drop . Dealing as much damage as quickly as you can brings him down in good time. Stay on the far end of the dock so the shrimp is stuck fighting the orange more than you and call in the big guns. If you find you're taking too much damage there are world objects around you can comfortably go sit behind for a bit to gain some health.
Once he's down you win! Yay!
