How to unlock the The Last Second achievement in Plants vs. Zombies Garden Warfare - Definitive Guide
You need to starts defusing the bomb at 9 seconds to be bang on 3, the way I got it and by far the easiest ( i think) is on the map sharkbite shores, as a zombie B can be defused through the fence. just wait until 9 seconds and start defusing

Takes timing and luck but the way me and a friend got this was one person be a peashooter and the other person be a sunflower. When the timer gets down to ten seconds have the peashooter start defusing and the sunflower start to heal. Worked for me in a couple of tries.
Also thanks to JDOG AR who helped me with this.

Does this unlock for the whole team or just the individual who defused it?

Another way of getting it involving less luck than playing in a half full / full game is to try and play Gnome Bomb when there isn't many people playing (I did it mid day on a week day for example). If there is no games going on, you will start by yourself in a new one, so just wait out until someone joins. Then, when the game starts, try keeping an eye out on the bomb and wait for the opposing player to get it, follow him until he plants it and then vanquish him. I used Chomper just for the easy Burrow + Vanquish combo. When he's gone, just wait out the timer and start defuse it when the timer is around 8.
I found the easiest method to get this achievement was by playing as the chomper on the plants side. Hide around a corner near a bomb site about to get planted on. With around 15-17 seconds left on the timer, burrow and move to the base of the bomb site and just hide underground there. Once the timer reaches 9 seconds, surface up and defuse that bomb.
Now, I am in no way saying that this will guarantee you the achievement. I just think that this is the easiest way to obtain it. I did, however, manage to get this in only two games. The games were full as well.

You can get this achievement by yourself. It's much easier than trying legitimately, although you'd need to play at times where there isn't much activity. If you're lucky, the remaining player(s) would leave.
In my case, it was around 12-1 AM EST.
If you end up in a lobby by yourself, plant a bomb (doesn't matter if you're a plant or zombie) and then switch teams. I recommend picking a character with a speed boost. Engineer as a Zombie or Peashooter as a Plant.
When 7 seconds is left on the clock, start defusing.

It will most likely happen by accident. But if intentionally, you need to start deactivating the bomb when there are 6-7 seconds left, deactivation takes about 4-5 seconds.

Although the trophy is more about luck, there is still one piece of advice: defuse the bomb from the side, and not as soon as you reach it. It is advisable that the Dwarf shields you from the main stream of enemies. In this case, in order to kill you, the enemy will need to bypass the gnome; even chili peppers thrown outside the gnome will not kill you.

The problem is that there are always either many of your own nearby and they will clear the mines without waiting, or there are many enemies and they will kill you. It is best to find a half-empty server, with a couple of people on it (ideal 1 on 1) and a bribed cactus or champion (allstar). They have quite a lot of HP and you can put additional protection on the sides, which will increase the chance of survival even if they start shooting at you.
