How to unlock the Adventurer achievement in Portal Knights - Definitive Guide

Not so much as a guide, but more of a heads up for those going for this on a cooperative map.
In order for this to pop, you have to be the one to activate the portal to the new island. Whilst doing this with my partner and wondering why it hadn't popped after our 27th island, I compared achievements with her and I was on 19 portals activated, and she was on 8! So if you want to check how many you have done, go to the achievements part of your profile and check in the Portal Knights section.

You can always start a new universe or join another universe and startup portals there. As long as you yourself are activating them, they'll each count for your 20 portals.

Despite having 22 islands unlocked, my tracker is still at 0. Should I be concerned?
