How to unlock the One for the Collection achievement in Powerstar Golf - Definitive Guide
A double eagle (albatross) is obtained by getting a score of -3 on a hole, for example scoring a 2 on a par 5.
You may get lucky and get this through the course of normal play, but here are my suggestions and setup if you want to focus on this achievement.
Course Setup
Free Play
City Park
Par 5 Course
Amateur Difficulty
The first par 5 you play with this setup is hole #2 which is reachable in two shots with a character that has decent power (see character setup below). Just keep playing this first hole going for the double eagle, quitting out and restarting when you fail.
Character Setup
I suggest using Reiko with her Tesla Field ability which will help pull the ball into the hole on your second shot. For caddy, I used Kirby and his Shot Prediction ability.
You will need to have decent gear equipped so that she can reach the hole in 2 shots. Here is the gear I had equipped along with their color, mostly obtained by buying "Extreme" card packs in the store. Of course gear will vary greatly depending on what you get from your card packs.
Solid Gold Woods (orange)
Reiko's Gravitation Field Irons (orange)
Slugger Wedges (green)
PG Pro Putter (blue)
Reiko's Gravitron Ball (orange)
This gear resulted in a power attribute value of 244
Shot Strategy
For your tee shot, you want to aim for the left side of the fairway to have the best angle at the pin. You can put forward spin on the ball to get a few extra yards. I was averaging about 270 yards off the tee.
For the second shot, I was using a 3 wood. Line up your shot as best you can and then use Kirby's Shot Prediction to see where it will go. Make any adjustments that are needed and then activate the Tesla Field ability (you need to move aim at least a bit before you can activate ability). Swing away and hope you get close enough that the Tesla Field will pull the ball into the hole. Of course there is always the problem of making an accurate swing as well.

Would like to add that I found the shot to be a little bit easier if you use forward spin on the ball. (up on the d-pad) When you line it up with Kirby's shot prediction you want it to stop a little short of the hole (maybe 10 feet) By doing this you'll notice that you land short of the green but the forward spin makes it jump and roll, the tesla field will then suck it into the hole.
If you land on the green your shot will go past the hole and with the slope of this green it is not good at sucking the ball back towards the hole.
I hope that made sense. Once you try it a few times it should make sense. If you land the ball on the green it comes in too hot (high speed) for the tesla field to pull the ball enough.

I found the Par 5s on City Course took more skill then I possessed to get the Double Eagle. But hooray there is a super easy hole to get this one

Rocky Ridge

For the golfer choose Reiko because her power up really helps. Play through the first three holes without using her power. The fourth hole in the set is extremely easy to reach within the required two shots. Simply, make the longest drive you possible can, then activate your power up on the approach and knock it in.
