Once you un lock Laoshi you will be able to play as him in any mode. Load up a free play game and pick the City Park par 5 holes. You will need to use his special ability 3 times so make sure you have the booster which allows the special ability to be used a minimum of 3 times (the card is purple/elite colored). His special ability slows down the shot meter when it gets close to each end of the bar making it incredibly easy to get the perfect shot off.

Now all you have to do is hit the ball 3 times obtaining the perfect shot and make a par or better. If your drive is hit deep, layup short inside 100 yards on your second shot so your third shot is close to the hole and you will be guaranteed a birdie putt giving you an assured par at minimum.

If you choose an 18 hole round on City Park you will get 4 uses of his special ability, and wouldn't need the booster then.
