This can be done in multiplayer using one controller.
Start up a multiplayer match and break as normal. Have the second player which you also control foul the shot. This allows you to place the ball which suits you best, whether your solids or stripes. After you have sunk all your balls plus the eight the achievement will pop at the winners screen.
Be careful, if you sink the opposing players ball on a shot it will void the achievement. Also, having the other player sink the eight off the bat will not award you the achievement either.
