Very easy to do and with one controller.
Go to multiplayer and start a game by pressing

Once the game has started, break and go for either solids or stripes it doesn’t matter. Multiplayer allows you to use one controller so when the second players turn comes up, purposely try to sink the 8-Ball. Once you sink it as the second player the achievement will pop at the winners screen.
