Use 2 controller make it easy enough
1) Start exhibition match with 2 controller, choose a poor team for player 2
2) Pass the ball to defender for player 1, run towards the penalty area and shoot (as player 2 is not move, it will be easier for player 1 defender to pass all defender), may take few tries depend on your shooting skill

Just to add, if you have a penalty and you have a defender take it that does not count. Must be from open play.
