Go to MATCH > PLAY NOW > VERSUS and play a game against COM. Should pop after finishing the game and returning to top menu as the data saves

From the Main Menu, go: Play Now => Versus. You will have the option of playing Versus the computer or a second controller, choose either option and you will unlock this and VERSUS (2 Players). I suggest the latter match being used for the miscellaneous trophies mentioned in the Road Map.
