The description of this achievement is fairly poor. It really should say “Defeat an opponent with a Team Strength two stars stronger than yours”.
I did this using the following steps:
1. Go to Kick Off > Versus > To Next Match
2. On the team select menu, choose any two teams with the home team two stars worse than the opposition. For my match, I chose Hearts from the Ladbrokes Premiership and played against South Norwood (AKA Crystal Palace) from the English League. Hearts have a two-star rating and Norwood have a four-star rating.
3. Go to General Settings and change the Match Level to beginner, Match Time to 5 mins, Home Condition to green (upwards arrow) and the Away Condition to red (downwards arrow).
4. Win the match. The achievement pops on the final whistle.
This can be achieved with any pairing of teams with a star rating difference of two or more. In my opinion, choosing a two-star v four-star team makes it easier as you don’t have to face up against any ridiculously excellent players and you still have some good quality yourself.
I’m sure it will be possible to get this in other modes, but 100 matches in to the game I haven’t yet stumbled across this achievement so this is a way to get it for those struggling.

This will unfortunately need to be played Versus the COM but still super easy as you can play on Beginner. Scroll through the leagues and try to find a team of 2* rating and an opponent of 5* preferred and win the match, as you'll be playing on Beginner you can walk the ball in.
