Side note - I tried numerous times on track 1 but got nothing. After doing it on track 2 as per the guide, it took 30 seconds for it to pop after I'd got back to the quick play menu

Just FYI to anyone doing this, I tried this about 5-6 times using a variety of cars, weather, and even a race on Track 1 and got no Achievement. The Achievement didn't pop until I started up the game the next day.

tried earning this in the Mercedes Invitation event and it didn't pop

This can be done in Quick Play, Custom Race. Choose the Mercedes-Benz Ice Track and select the Ice Track 2. Now choose any Mercedes car and set the event to 1 round and no opponents.

It can be a pain to drive in snow but you simply have to finish a lap to complete this event and earn the trophy.
