How to unlock the Twice At The Top achievement in Project CARS 2 - Definitive Guide
After you've finish the "Zero to Hero" progression through all six tiers, every championship is available as your next choice. I chose Indy as my first and Global Endurance Championship? (WEC-equivalent) as my second.

The above solution isn't wrong but I would recommend in addition to the Indycar championship you choose the TC Masters International instead of the Global Endurance Trophy.
The reason being that despite the GET only being 3 races long on a short season 2 of those are endurance races even at their shortest length while the TC one is 2 lots of 2 short races to get to the proper championship then it is only 2 short races + 1 race which is 2 laps of the full Nurburgring but can be skipped as long as you win the other 2 events in the championship.
I would say both run at short season + shortest race lengths winning the TC one will take you 3-4 hours less than the GET to finish.

The GET contains the Le Mans event required for the Triple Crown achievement, I think the quickest way to get both this and that would still be to win the TC Masters then skip through the GET races to the Le Mans race. (Credit to The Manic Moose)

Good advice but one of the achievements you need to win at Le Mans and therefore need to do the endurance event at some point. The race is 2 hours long.

In career mode there are 5 different championships in Tier 1. You'll have to win 2 of them for this trophy.
Indycar is recommended when you first reach Tier 1 as there is a race needed for Triple Crown . The second race needed for this trophy is in the Endurance championship but this one is long, so you can complete another quicker championship instead and leave that Endurance race for later.
