How to unlock the Hungry For Power achievement in Project Wingman - Definitive Guide
You must purchase all available planes.
You buy these with "prestige" credits, awarded after each sortie mission.
But unlocked planes carry over through Conquest mode playthroughs.
So don't worry about it getting too difficult after a few missions. Just upgrade your plane, and restart the Conquest mode playthrough if you need.
Missions follow a pattern: shoot down a specific group of enemies or gain a certain score, and then a intercept flight appears to target you. Usually a squadron or a couple airships and a half squadron. So plan accordingly, don't rack up a huge score and lose your plane health and empty your weapons to then have to fight a more dangerous enemy group.
The 4th plane unlock has an anti ship missile that is great for knocking out airships for large point scores if you want to farm the beginning missions a few times to unlock better planes.

Couldn't find info on loadout and settings tips, so here's what I figured out:
For starters, do a few short runs with the starter MiG-21 until you can buy the aforementioned Mirage, it's 4th plane on the list.
Equip your new Mirage jet with 4x MLAA and enable two modifiers from the Conquest mode start menu: 2x enemy spawns and either of the 2.5x damage modifiers. Now you can fire one volley of Fox-3s and down an entire spawn of 4 transport planes each worth 400 pts. Keep farming those transports until you can unlock the experimental PW prototype (125k if memory serves).
With the PW you can easily go on longer runs while upgrading your fleet so that they do some scoring for you. PW's railgun can one-shot the airships if you aim well--I adjusted my cockpit FOV to the narrowest to get extra zoom and precision. Spend your credits on Airships of your own and throw in some railgun upgrades too. In my experience the fighter jets aren't worth much.
Difficulty doesn't affect your prestige pts, so play on Easy. Adjust alert level modifier to whatever you're comfortable with. You need approximately 750k total to unlock everything.

I bought all of them and the achievement wasn't unlocking for me so I went into the campaign 'free mission' mode and slowly started selling and re-buying airplanes (I already had all of them) and the achievement unlocked... so try that if you're having an issue

Despite looking for a good hour, I couldn't find any real info on how prestige is awarded in Conquest mode. As far as I can tell, it's awarded at the same rate as credits for destroying enemy units. You do not get any from the "bonus payment" on each sortie. Difficulty doesn't effect prestige/credits earned so feel free to play on easy.
Any prestige you earn isn't lost. If you stay in a mission and get a score of 100k and then you're shot down, don't worry, you keep all of it, you only lose the credits, not the prestige.
With that in mind, you need approx 1 million prestige to unlock everything.
You start with the basic T-21 MK.1, you should focus on getting enough prestige to unlock the SV-37 MK.1 (if memory serves it's about 24000) which has the MLAA, this will be your workhorse now.
Play through conquest mode and gather around 125k prestige and unlock the PW-MK.1, this is the best plane in the game hands down. By the time I'd unlocked this, I had completed the other Conquest achievements and was only left to farm prestige.
Here's what I did.
Start a campaign on Easy, put the alert modifier to 4x. I took the "Glass Cannon" and "Double Down" modifiers to increase my damage and double enemy spawns. I didn't bother taking the other damage increase as it reduces your ammo count too much and you want ammo.
Now, play through the first few missions, you'll usually get score attacks, what you're looking for is a Fleet Hunt or AA Suppression mission. Load in and begin destroying standard units, ignoring the objectives. As you're doing this, your alert level will increase and more valuable fighters will begin to spawn in and in larger numbers.
The sky is going to get crowded but essentially you want to kite them in a large group, spin round, launch a cluster missile and run away, repeating the process.
By alert level 20, you should be getting 10k-15k every time you launch a cluster missile.
You'll die, but you can easily end the mission with 100k-200k prestige and it's far quicker than playing through missions normally.
Once I'd gotten the technique down, it only took me a couple of hours to farm 600k prestige.
