do you have to replay the whole level or does it save rightaway when you get one and quit out?

I think it would probably save your progress even if you don't finish the level. I base this off of the achievement popping immediately after the last trap. However, I'm not sure. I think I played to the end of each level just to be safe, but I don't remember for certain.

Do traps from challenges count?

I don't think that traps in Challenges count. If I remember correctly, all the traps occur during fight scenes in the main story.

I had Stocks missing and Mine Cart after my first play, i went through The Chase because Stocks is right at the start, got the Stocks trap and finished that fight. Quit out and did Mine Cart, popped straight away. So i think you can quit out after getting one or alteast after the section ends.

This requires you to take out an enemy at least once with each of these traps. Some, such as the barrel, are quite common and will be found everywhere. Others, such as the window, only have one location. The order in which they appear in the game are:

There are a total of 21 different traps to be found throughout story mode. These are only found during fight scenes. They are obvious to spot during gameplay. Just lead your enemy in front of the trap by side stepping. Then, either kick or use claw frenzy to knock them into the trap.
