A defense award is given when someone comes close to grabbing the flag and you kill them before they actually get it.
The best way to do this is to go to Arena CTF with 3 buddies. Have the 3 people in a group and you search for the game. What happens is the game will group those 3 on one team and put you on the other team. (So 3 on 1).
The group of three people will keep running to your base and stand close to the flag. Make sure that you grab the doubler (which is the red power up) and as they get close kill them. If they come together you may also be able to get some excellent awards that will count towards that achievement as well.
In one Arena CTF Endurance match you should be able to get all 250. If not then start the match a second time and finish them off.
In my match I was able to get 181 Excellents and 214 defense awards.

Simple. Once again, search Endurance Arena CTF with just you, and have three other people search as well. Take the doubler, sit in your base. have the three continuously come for the flag, but don't touch it. They need to be close but not capture it. You will receive a defense point upon touching the flag. This can be done in one or two games, depending on how fast the enemy comes to your base.
