As of today, at least on Xbox SeriesX:
Be careful on if you're trying to do this to have the most fun you can by making your player rating 100. It freezes every time you try to add the player to a roster.
If you just want the Achievement (without even having to save the roster) just click the option to create, hit B, then hit and select Save. It'll then ask you to save the roster but the Achievement pops before you do, so you can back out and not worry about having a generic player on a team.

Start Franchise should be mentioned for what it worth.

thanks for the guide, I also had to move the created player from the reserves to the active list for the achievement to pop
