Exactly as the description says, you have to hit 10 cows. You can get this playing through the game by hitting into a cow when you play a level. The first time you get the chance to hit a cow is in Level 3.
You can beat level 3 and then hit restart 10 times if you want this Achievement early on. I can personally confirm that this works.

Anybody having trouble with this and other achievements unlocking? I even uninstalled and got it again but still nothing.

This achievement requires that you hit a cumulative total of 10 cows across all replays of all levels. Cows are scattered across many of the worlds and when you hit them they will send you flying. You will hit way more than 10 while completing the game, but it you want to get this done early, the first level you can earn this on is Sweet Home 3. Launch the Rabbid to the left, pick up the jetpack, and then boost into the cow. Reload the level and repeat until you reach 10.
