Select Championship mode from the menu and select the first championship which is for the Mini, then adjust the settings to:
Novice
1 lap
1 AI
No qualifying.
Then just beat each of the seven tracks and you'll receive this and The Champ in Race Pro as well, for winning a championship.
If you're feeling lucky you could try to do it on professional to receive Champ for Life in Race Pro as well.
Alternatively you could just press start and End Session at the beginning of every race to speed this up further, you wont win but the achievement is only for completing.

Will not pop, even after restarting the entire game and setting to hard mode and deleting the cache. Grrrrrrrr

Go to 'Championship' and start a new championship. On 'Race Settings', feel free to change some settings to make things easier and of course play on 'Novice' for those not wanting to be challenged.
After this, you will see several events. Complete all of these to get this achievement. Ensure you are in first by the end of the championship to get the "The Champ" achievement too. Having one lap for each race makes thing a lot quicker.
