If you're a heavy handed driver like me I found by far the easiest car to do this is the Mini. The car hasn't really got the power to make not having ABS and TCS noticeable so I was able to drive normally. I also set the laps to 1, the opponents to 1, and the difficulty to Hard. I got most of my Pro track win achievements first or 2nd try with this method.

Go to 'Single Race' and choose the track and car of your choice. I would advise using a track you've been familiar with in other racing titles. When you get to 'Race Settings', adjust the difficulty to 'Professional' and any other aids that will make things easier for you (laps, opponents, etc).
This is much harder with a full pack, so you can have one opponent and beat them to get this easy.
