Start a single player game -> Pick Zandvoort, then pick the class you like -> Change settings to professional, opponents to one and laps to one.
Might be an easier way but thats how i got it.

What I did is this. I put it on the track in question and chose the Mini Cooper class (I think there's one, but I sold the game a bit ago). Then I put the race on 1 lap and made sure to block the only AI car on the track.
