How to unlock the Don't Worry, Be Happy! achievement in Rainbow Moon - Definitive Guide

Lose a battle and pick the option to re-spawn (circle) and then go back into a battle with 1 HP. Lose the battle again and then rinse and repeat to get your three battles. Once that is complete you can reload a previous save and not have any defeats if you are saving often.

It's better to lose early in the game so you don't have to spend a lot of money on recovery later at a high level.
