How to unlock the Scaredy Cat achievement in Rainbow Moon - Definitive Guide

You can escape from any fight, including bosses, with no consequences. The quickest way to farm this is to find any creatures that are present in the world (Not random encounters) which you are faster than. Just run into them, escape, and repeat 30 times. Since you're not killing the mobs, they'll still be present in the world, allowing you to earn this trophy very fast.

Just use the 'Escape' menu during battle and you will get the trophy.
