Snap shot 1 seemed the easiest to me - race down the course in 60 seconds.
Hold the left thumb stick forward to build up speed and just dodge the trees, snow hills and other skiers.
There is some margin as I wiped out twice and still made it in 58 seconds at the first attempt.

It's indeed verry easy, got 54.5 on first try and 3 or 4 collisions, hard to fail :)
