I found the easiest way to get this trophy was with the mosquito guys that launch green goo at you. they fill up the void shield quickly and you can easily get far enough away from them that the concussion from the shield release doesn't hit them but the returned missiles do.
There are three of these guys at the beginning of Torren IV. you can just take them out and then hop in the ship. leave the world, and then come right back and they will respawn.

I found the fastest way to upgrade it was to enable infinite ammo and then go to the last level of the gold arena, where you face the centipede and dinosaur bosses together. just use the reactor on the bosses over and over again and you can fully upgrade in 1 or 2 runs.

I easily got the trophy by redoing the 1st Zurkie's bronze challenge a few times on the hardest difficulty and killing the pirates by returning their bullets.
Changing the difficulty from the game options is easier, as you won't one-shot most of the ennemies if your Void Reactor is at level 5 already.
Turning on infinite bullets can also help and won't void the trophy.

Got it using this method. For convenience, just reload the checkpoint after you finish the 2nd wave and restart the challenge, no need to finish it for the kills to count.

This was one of the hardest trophies for me.
General advice would be NOT to upgrade the gun, but use it a lot to get easy kills early on to level it up to the Level 5 required to return enemy bullets.
I'd fully upgraded it before getting the trophy, so it was over powered and the shield/gun itself kept on killing enemies before the returned bullets.

Your Void Reactor needs to be Level 5. Go into challenge mode (new game+) and proceed to the area where you first meet Ms. Zurkon. Buy ammo from her so you're topped off on Void Reactor.
