Pretty easy to do just keep an eye out for a cow that pops out the window and smack the cow with your hand! They do alternate sides so just keep watching. Also there are more than 4 cows in the level. Good luck

I have played this mini-game 5 times and only saw 1 cow once. Do you need to get a certain slap streak or something? Need more details for this solution please.

What this solution doesn't make clear is that you actually have to "slap" the cow. Meaning, that you can't just still your hand at it. Also, you get waaaaay more points in the game itself, if you actually "slap" the Rabbids and not just "hit" them.
