You can check how many creatures you have and how many you have left by going to the Creatures section - Far left of the main screen of painting.
You unlock the Scratch cards by getting a certain amount of Lums in each level - most of the time this amount is 450
Once you have unlocked one you will be able to scratch it by pressing Y and bring up the correct sub-menu.
The scratch cards are all set and not random and you will not unlock the last creature until the last few Scratch cards overall so you will have to complete nearly every level inclduing Back to Origins to get this.

Creatures are unlocked when you scratch lucky tickets. You are rewarded of a lucky ticket every time you complete a level with 75% of the required amount of lums. As there are 113 levels, you will unlock your last creature near the end of your completion.
All the creatures you've unlocked will appear in the "Creatures" painting and will drop a certain amount of lums everyday. When you collected all of them, they drop a total of 972 lums everyday.

Creatures can only be won through using the scratch cards you unlock for receiving a certain amount of lums in a level. There are 60 creatures in all and you won't get this until you've completed almost every level in the game.
