How to unlock the Weapons 100% achievement in Record of Lodoss War -Deedlit in Wonder Labyrinth- - Definitive Guide
You don't even need to go for this during your normal playthrough. No having to buy all store weapons, farming drops and especially you don't need to no hit the Memory boss for Parn's Sword.
As others have mentioned, simply after finishing your first playthrough and popping the "All Clear" achievement, at the main menu choose a new slot and select the "All Weapons" option. You then simply have to run through the first 5 minutes to the shop, sell your longsword and then buy it back. Farm the goblins 2 or 3 times next to the shop to get the 230 gold.
Super easy no hassle solution.

I had a bug, and even though I had a completely collected weapon collection, I didn’t get the achievement. Your method of selling a long sword and buying it back helped me. Thanks for the guide!

UPDATE: Seems there's a way to get this achievement without needing to do any of this. Check the comments/other solutions for the deets.
This is less a guide for getting all of the weapons, as the link in Hisket's solution has that covered, and more for getting one weapon: the most frustrating weapon that doesn't involve S-ranking the bow training.
Parn's Sword.
To get Parn's Sword, you need to defeat Memory, the first half of the final boss fight, without being hit. Even if the boss itself isn't too hard, beating it without taking damage can be tricky... or so I first thought. However, it turns out there's an easy way to win—go on the attack.
As long as you dodge the first two swings (jumping away seemed to work) you have plenty of time to take down the boss's health while it's posing minimal risk. And even if you don't quite succeed, the boss's next move will be to go to the side of the arena and throw out some mobs... giving you even more free attacking time. Do it right, and you shouldn't need to worry about dodging daggers, axes, or stopping healing.
Your new sword will drop from the enemy (not shown in the clip), hopefully giving you the achievement if it's the last weapon you needed. Otherwise, beat the final boss to add the weapon to your collection for good.
Update: It seems if you take the fight to the perimeters of the boss room, you risk the sword becoming inaccessible during the next stage of the fight, forcing a reset. So do your best to keep the fight close to the center of the room to save bother.

I eventually figured it out and 1000G'd you simply must ensure that you kill the boss close to you.
When the next boss spawns, the screen will scroll to wherever it needs to. If that weapon ends up off screen in that process, it will disappear.
Thankfully doing it without getting hit isn't too difficult. Just yeah, try to keep the boss close to the center of the room.

The Vampire.
As for the weapon vanishing, I don't have a clue. It didn't happen to me and is probably a glitch. Hopefully it fixes itself.

If your achievement doesn't pop, try to close the game and enter again.
Load your save and go to the shop and buy any weapon, then sold it (It worked for me).

There is a really nice steam guide that helps with the location/drop of every weapon in the game. Helped me 100% complete :)

Edit: you will need to buy all the weapons in the shop too.
Edit the combat knife is called the survival knife if i remember. Check the options guide to see any weapons missing.

Not sure if it is just my game or a persistent issue but I am missing the Combat knife. I have looked at the location based on the steam walkthrough and low and behold not there. Just an empty room.

Anyone else having trouble getting the "lighting bow" to drop from the "Valkyries"? I have farmed this enemy (total) over an hour and it just won't drop. I double checked my inventory and bestiary as well.
Edit: Dropped for me 10 minutes later from making this comment. If your as unlucky as me with this, prepare to grind for this bow!

So i had a trouble to unlock this achivement in xbox series S but i find a way, just start a new game after unlock all weapons and the achivement doesnt pop, choose the option to start the game in a new save with all weapons, go to the early shop you find and sell your long sword and buy it back, the achivement must pop in your screen.
Se já conferiu se está com todas as armas e não caiu a conquista, é so iniciar um novo jogo escolhendo a opção com todas as armas, é só chegar até o vendedor ali na primeira área, vender e comprar de volta a Espada Longa.
