How to unlock the Eventful achievement in Red Dead Redemption 2 - Definitive Guide
Free Roam events are random pvp events that only trigger while you are in free roam mode. You have no control over them and they spawn randomly. From the ones I've played I had one spawn at 15 mins to the hour and another one at the top of the hour so it could be every 45 mins or just those 2 intervals. I will update if I see any trends.
When available, you will see a purple notification on the top left corner of your screen. Hold the menu button then A to accept the invite. The game mode will be anything pvp from Master Archery to King of the Castle you have to compete in. If you miss the invite just press left on the d-pad and go to invites to accept. You have a limited time before the invite expires You just have to complete the event to get credit but you will also receive XP and Money based on your performance.

To unlock the Eventful trophy in Red Dead Redemption 2, you must take part in five of the random free roam events.
The Free Roam events are random and only occur when you are in Red Dead Online's free roam mode. When they become available, you will see a purple notification in the top left corner of the screen. Hold the select button and accept the invite with X to take part. If you miss the invite, press left on the D-Pad and go to invites to accept.
Once you complete the event, you'll be rewarded with XP and money based on how well you did.
After taking part in five of them, you should unlock the trophy.

Just wait for the missions to pop up and join through your player menu.
If you want to manage your time better, you can use the Red Dead Online - RDO Map. It shows when the next event occurs.

Whilst playing in Free Roam, you will occasionally get a notification in the mid-upper left side of the screen indicating a Free Roam Event invitation. These notifications will have purple text to them. To join the event, you must accept the invite before the event starts and becomes unavailable. Try to be a bit hasty with accepting, as sometimes they will start quickly. You can accept the invite in two different ways. First, as the invitation appears on screen, you can press and hold the options button to take you right to the invite menu. From there, select the Free Roam Event to join. If you were in the midst of something and didn't accept the invite right away, you can tap to bring up the Free Roam Menu. Afterwards, select Invites to bring up a list of your open invitations.
Similar to a Series, you must join and see the event out to its conclusion to get credit. Do note that you will only get these notifications when in Free Roam. You won't get them while actively participating in PVP, racing, stranger missions or story missions. The frequency you'll get invites to these events is completely random - sometimes you'll receive them one after another, while other times they will be few and far between.

Events are incidents for which you do not need to load missions and select players. This is what happens in free play. Be it “clear the gang’s lair” or “prevent the execution of an order”, etc. They don't last long. The trophy is quick. Can be done without a squad. You don't have to win.

When you log into the server, you are immediately sent an invitation, accept and follow through. It is not necessary to win, the main thing is to participate until the end. In my case, they always threw in express delivery. Done, go to the new server: pause -> network -> free mode so as not to wait a long time for invites.

Tasks do not appear after each transition to a new server, but according to a schedule.
Actually a website with a schedule.

The main thing is to play. It doesn’t matter whether you win or not. You just accept the purple window
