How to unlock the Give to the Poor achievement in Red Dead Redemption 2 - Definitive Guide
This achievement can be done literally in a single deposit about an hour after the start of Chapter 2.
You’ll first need to get to the point where you can free roam anywhere you want around RDR2’s map. Afterward, you’ll want to complete 2 very specific treasure hunts that will earn you $3500 before even touching a story mission. To quickly knock this achievement out early on in the game, as soon as you are able to donate to the camp and free roam around in Chapter 2, head to the burned down town of Limbamy. It's a VERY short ride from camp, marked red here on the map:
Once you arrive in the town head to the burned down Sheriff building and look behind the desk on the left as soon as you enter. There should be a lock box that contains a Gold Bar and Special Horse Stimulant Pamphlet that teaches you a crafting recipe. Take the gold bar back to camp and donate it for $500 in camp funds and this achievement.

The gold bar method has been patched so the easiest way to earn money is to follow the glitch in this video. (Thanks to Reborn Insanity for letting me know).
Once you have $250, head to your camp and donate to the box next to Dutch's tent, which is unlocked as you progress through the main missions in Chapter 2.
When you have loads of money, head to Saint Denis' tailor. You should be able to fast travel here if you have previously been here.
Make a new save before you enter. When you enter, you should get pickpocketed. Chase the thief, hogtie him and then loot him. If he took more than $250, you will get that money plus a bit extra. He took $490 from me and I gained $610. The reason for saving is that you don't always get the money back. I tested it on three different save files so I believe this event happens for everyone. Please let me know if that is not the case.

Thanks for this very helpful! How & when dyou unlock the fence to be able to sell the gold bars? Is there any other way to get money out of them till then?

To unlock the Give to the Poor trophy in Red Dead Redemption 2, you need to approach the $ symbol in any camp and select Contribute and donat $250 over time, OR select the ledger and buy camp upgrades to the tune of $250 over time -- this also counts as donation.
