How to unlock the Skin Deep achievement in Red Dead Redemption 2 - Definitive Guide
Welcome one and all to Skin Deep. I'll get right to the point - if you're here for a straight-up video guide for where to find animals, I suggest using the video linked below, else, continue reading for a full list and tips.
The Video
This video is an invaluable asset when going for this and the Zoologist achievement - the video guide has locations for every animal in the game. In nearly all cases you will find the animal in the exact same place as the video, or if not, in the general vicinity. You can also perform the reload trick to respawn all the wildlife in the area (Save Game > Exit Game > Reload).
How to Skin
To skin an animal you will need to kill it, and then walk up to it and hold . This will activate the particularly gruesome cutscene and you will be given a pelt. You can then choose keep or discard the pelt - but it is not needed for completion of this achievement.
NOTE: A number of animals are not needed as they can not be skinned. This is the reason for there being missing numbers in the list.
I would suggest combining this achievement with the following as they go hand in hand:

Hints & Tips
AUTO AIM
First things first, head in to your settings and set auto-aim to wide and auto aim lock-on to max. This will mean that in some cases even if you can't see the animal, you may be able to lock on to it anyway. In all cases, make sure you turn on dead-eye and mark the animal before shooting.
EAGLE EYE
Click and together to activate Eagle Eye, allowing you to see animals and their tracks. You are taught how to use this as part of one the first missions in the game and you will need it. A lot.
COVER YOUR STINK
When hunting, ALWAYS use Cover Scent Lotion - it will allow you get closer to animals without them running away. Your character gets very stinky very quickly, so unless you fancy taking a bath every 10-15 minutes this is your best option.
PREDATORS
Panthers, Cougars and Wolves will attack on site, so be prepared. When in an area with these predators, keep one eye on the minimap at all times. As soon as you see a red dot, mash the button which will cause the animal to be batted away, giving you more time to kill it.
You can try to use Cover Scent Lotion and Predator Bait (for Panthers you need Potent Predator Bait) to lure them to a specific spot, however this only works sporadically in my experience, and on most occasions they will still attack you, ignoring the bait.
SNAKES!
The easiest method of finding a snake is to ride around the area on your horse until a red dot appears on the map - this means that a snake has tried to attack you. Loop back quickly and you should be able to find it in the area where the dot appeared.
IF AT FIRST...
For everything on this list, you can use the 'reload' trick (Save Game > Exit Game > Reload), this will respawn all the wildlife in the area. This is also how you can get 3-star pelts easier, as you can reload the same animal until it is a 3-star.

I've made a simple Excel spreadsheet using crewdy4923's confirmed list of animals that are required. Hopefully this can help you guys keep track of the animals easier, rather than going into the compendium every time.

Download the file off Google Drive, and make changes as you go along. Simply change the "N" to a "Y" once you've skinned/studied the animal. Some animals (mainly birds) only need to be studied, and this is indicated by a "-" in the "Skinned" column.
The % completion at the bottom should correspond with the achievement tracker, save for a few rounding errors, so you'll know you're on the right track.
This will also help with:

I will not respond to any requests to share access to the file because I don't want to risk it getting messed up for everyone else.

For the big cat at braithwaite manor I found that predator bait works very good.
