These can be unlocked in Arcade Mode. You need to complete the three tracks on Genesis.
Lunar City
Cain's Flats
Neumann's Outpost - Try the left path at 30%. It was easier for me and was generous with the checkpoint if I did fall off.
You have unlimited time but some of the later tracks can be frustrating if you fall off due to the checkpoints. Sometimes you can lose up to 30% or more! Just be patient and you will eventually get it.
