These can be unlocked in Arcade Mode. You need to complete the three tracks on Origin Black Hole
Sputnik
Voyager
Cassini - The jump at 59% is particularly tough and will reset you all the way back to 32% if you mess up. As you takeoff, use your boost (LB) and aim the right stick down to try and land as soon as possible. Adjust in the air as needed.
You have unlimited time but some of the later tracks can be frustrating if you fall off due to the checkpoints. Sometimes you can lose up to 30% or more! Just be patient and you will eventually get it.
