Ramón Salazar is allergic to eggs. You can insta-kill him by throwing two golden eggs at him.

You can find two Gold Chicken Eggs in the RE4 remake.
1. One is in the isolated chicken coop on the east side of the lake in Chapter 4, (side mission request).

2. The other is in the castle’s Throne Room, which you can revisit in Chapter 12 after Leon’s trip into the dungeons. You’ll need the Cubic Device to open the case the Egg is in, and it counts as one of the Castle's treasures (side mission request where you need to throw a golden egg into his portrait).

Also, you can throw a grenade into his mouth to grab an achievement. Throw one golden egg first, then a grenade.

First try when doing this was throwing the golden egg and then throw two heavy grenade and one normal grenade just to get that other grenade achievement and poof, he's dead.
Playing it in normal btw

Salazar is the final boss of the castle area of the game. The fight has been reworked a lot compared to the original game. He is no longer stationary but moves through the arena all the time. He will be creeping across the room, dropping small mines on the floor which will damage you when close. His main attack, though, is telegraphed by a screech after which he will spit acid in a straight line at you and once you dodge it, his “cage” will be open for a short time giving you an opportunity to attack his weakspot. Another attack of his is an insta-kill grab which will eat you up if you don’t move away when he gets close to you. On higher difficulties and speedruns it is recommended to use a Rocket Launcher to kill him in one hit to save time and resources.
This one deserves a place amid the pantheon of annoying Resident Evil boss fights. First and foremost, make sure you maintain distance from Salazar, or he’ll gobble Leon up in one go and that’ll be that. Wait until the monster’s maw is open, and throw in a heavy grenade if you have one. Failing that, try to shoot the yellow eye on Ramon’s stupid face - he’s inside the creature’s mouth. Keep plugging away and moving, being sure to shoot the exploding pustules he dispenses on the floor, and avoid the stream of acid spit he likes to spew your way, as this inflicts major damage.
This was a very hard fight until I found the secret.
THE GOLDEN EGG!
The Golden Egg will take 70% off his health! Then the flight is very manageable after that.
You have to throw it at his face/body when he's exposed. I did it right when the flight started.
You find the Golden egg in the part of the castle where you went down the hole. You have to go back there in order to get it. It's in the throne room in the cage with the square lock.
**Also, grab a brown egg that one of the chickens lay and throw it at Osmonds portrait. The merchant will reward you.
Hope this helps.
