How to unlock the Real Deadeye achievement in Resident Evil 4 - Definitive Guide
I liked this guide the most 'cause it describes in the video the order of shooting and where deadeyes will pop up for 100% completion, when to switch/reload weapons, timing, etc.
As mentioned here you can complete all previous shooting ranges in the next shooting range. (For example, if you are in Chapter 9, you can complete both Chapter 3 and Chapter 9 shooting ranges challenges.)
Total: 12 shooting ranges. Unlocked in groups of three in chapters: 3, 9, 11, 14.
Note: In Chapter 15 there will be also a shooting range with all previous challenges but without new ones. So Chapter 15 is your last opportunity to complete all on S rank.

This achievement is going to be the death of me. It is horrible, its the only one I need and its just an awful achievement. Really struggling with it.

Of the Resident Evil 4 achievements in the remake, Real Deadeye is one of the more difficult ones to unlock. You will need to complete each of the 12 shooting range challenges to reveal the bonus condition for each. Once you know the condition, you will need to meet the criteria to unlock the bonus round (for all except 4-C), giving you a chance to rack up a higher score, boosting it from an A rank to S. The bonus conditions are usually for killing all pirates, killing them in a specific amount of time, or killing them within a specific number of shots.
Shooting ranges are found by taking the elevator next to the merchant in Chapters 3, 9, 11, 14, and 15. A new set of 3 challenges will unlock when you reach the range in the first 4 chapters listed. Chapter 15 is there to give you a final chance to complete the challenges before the end of the game. You can save all challenges until you reach either Chapter 14 or 15.

This will likely take a fair few attempts, but if you persevere long enough, you’ll be able to learn the patterns for each shooting gallery. Be sure to target the skull medallions, too (there are ten to look out for during each challenge), to maximise your score (they’re worth 300 points a pop), while making sure not to hit any innocent sailors, as you’ll lose 500 points for each one caught in your crossfire.
The multi-weapon shooting ranges will require judicious use of each weapon, so use rifles for ranged shots, shotguns for clusters of targets, and the pistol for mid-range targets. Yellow pirates holding dynamite are useful, as well - shoot the dynamite and you’ll clear the board. Be wary of each challenge’s special requirements for bonus mode, too - in most instances, you’ll need to activate it to attain the score target for S rank. There are five opportunities to visit the shooting range throughout Resident Evil 4’s campaign.
