By "bullet" they mean the weird bone like projectile that the Tricorne Ooze enemies shoot at you. These seem to start to appear in Chapter 3-1 on Normal Mode. It takes a bit of practice, but after a few attempts, you should be able to get this.A few tips:
- Kill all other enemies neaeby
- Make sure there are no obstructions
- Stand still
- Swing your knife
when the bone is about a foot or two away

Easy to practice on the first stage of Raid mode. There's 1 Tricorne all by himself at the end of the hallway leading to the cafeteria. Good place to practice dodging projectiles, shooting and knifing them without any real worries, though it won't get you the cheevo

Very easy, as soon as you encounter an enemy that shoots projectiles out of its hand, simply time it correctly to destroy it.

A few episodes into the game and you will start encountering Oozes(the humanoid-type enemies) that have triangular shaped sides on their heads. These enemies shoot bone-hooks at you from a distance. These are the "bullets" that you have to deflect with your knife. All you have to do is give yourself some distance and then time a knife strike right before it gets within an arm's length of you.
If you doubt your skills at all, you can also hold down the knife button and just hope that you get it, which will work a good chunk of the time. Also, if you take too much damage from trying, you can reload after you get the trophy.
