While you only need to collect 50 gold ingots to unlock all three levels of these achievements, you need all 80 gold ingots in the game to be able to buy enough powerups for GEAR UP 3 (100G). Refer to that achievement solution for details on collecting all 80 gold ingots in the game.

There are 2 gold ingots to be found in treasure chests in each of the 30 levels.
Several of the levels have shops where you can buy another one.
If you want to complete the game you should also try to buy the gold ingot from every shop you come across as you will need the gold ingots to unlock "GEAR UP3" later.
Simply collect 50 for this achievement.
Achievements seem not to unlock when expected in this game but when going to the shop page from the starting menu.

A commenter on the UPGRADE achievement listed the 20 shops that each sell an ingot. It looks like if you open a chest, then quit out of the level, you keep that ingot, but I'm not 100% certain it does, nor on whether you keep the potion bottles you've found.
As far as hunting for chests, I've noticed that, if there is a secret area (wall/floor/ceiling you pass through), there will be a chicken standing nearby. Not certain if this is 100% the case either, but when I noticed it, it seemed to be that way. (edit) Most of the time there is a chest. Level 20 only had potions in the secret room a short bit into the level, and then a Shop hidden right before a checkpoint.
