If anyone is struggling with this I found an easy way is to go to the Red Bull Linecatcher big event. There’s a small jump straight after the first big drop. It’s easy to get a perfect landing on this jump. Just land a double backflip, hit backtrack then rinse and repeat!

At Canyon Lands / Chester Park (7580S - 4907E) is a loop track with a lot of Ramps that's perfect to jump at. It's also the site of the Around The World Bike Trick event when you reach roughly level 10 with your Bike Trick Career progress.
I had a level 380 bike that was able to easily and consistently land manual double back-flips (I suspect you would need at least a level 300. I tried with my Trick bikes in Level 200-250 range that didn't land consistently)
With your bike, pick up speed (using
) and press 
as you reach the summit of the ramp. Then hold 
as your character rotates 720⁰.
You'll successfully register a perfect landing if both your wheels touch the ground at the same time after your double rotation.
Go round the track roughly 10 times and the achievement will pop.

To set tricks to manual, hit start, go to options, and the first setting is for trick landing. Select manual.
To execute a double backflip on the bike, skis, snowboard, and most other equipment you can ride, hold down the A button as you approach the jump and release it to jump. Once you've released A, hold it down again and you will begin to rotate into a backflip.
Continue holding A down til you've rotated twice, and make sure you're rotated around back enough to land perfectly flat facing forward on the ground. You'll see a green "perfect landing" bonus pop up on the side. Do this 50 times.
You can do this in free roam or any event you are in, at any time. Check your achievement progress tracker in the xbox menus to see how many you still need!

I did this in Trick Academy mostly during the Introduction section of the game. Once I reached the snowboarding section, I just ignored the instructions and did double backflips all the way to the end. Then I hit Restart and repeated.
If you have already past the Trick Academy section of the Introduction to the game, then you can load it up afterwards from Riders Ridge. You can do this on most transport options, and any time. I just got it out of the way before doing any events.
The setup you need for this is to Pause the game, go into Options and set Landing Mode to Manual. For me, I also went into Controller and set Controller Preset to Trickster. My description is how to do it with Trickster configuration.
From the start, hold R2 to move, and down of the right stick. When you reach the top edge of a ramp, let go of the right stick and then immediately hold down again. This will start you off doing a faster backflip, and allow you to finish it easily. Once you have done 2 rotations, let go of the stick and then press it up or down depending on if you have rotated too much, or not enough. You want to correct it so that your board is in line with the angle of the ground. If it says Perfect on your landing, then you have 1 success towards this trophy.
Personally, I didn't want to play with Manual landing enabled, so I just focused on this one to get it done. Another good one to do at the same time is a 1080 spin with a perfect landing (hold left or right on the right stick and release at the edge of the ramp, then hold it again until you have spun 1080, then line up for your landing).
