Sack dummies are first introduced in the tutorial. The first 5 hits will release coins. It takes quite a few hits to destroy one.
There are two dummies that appear in the town hub, and they will respawn after each completed stage (includes re-plays).
Simply destroy 10 of these for the achievement.
It should also be noted that you can boost a couple of other achievements on these guys as well. Damage from back attacks and performing critical hits both count when attacking the dummy.
